How to choose another AI

No way to do that via Zero-K Lobby. If you're using a different lobby (such as SpringLobby) then you can add the other AIs, but you don't want to - none of them work correctly with Zero-K.

Because there's no reason to. Traditionally the AI option in SpringLobby is "here's 5 ways to make your enemy puke errors into the chat console and do nothing when you want to play single-player game". I can only imagine how many players got scared off trying to make single-player Spring games work when most of the bots just crashed the engine.

And then just block all ais for all games?

Rai ive seen working with zero-k and they are mroe challenging then cai sometimes. I really hope we can add some soon.

Best example cai never used Krow or Big Bertha or big Striders against me
Rai did build a bertha with enough ressources after 10 minutes gameplay.

RAI just happens to build random stuff. It fails to mex iirc, but if you team e.g. 2 RAI with 6 CAI, it can be more dangerous than 8 CAI. RAI on itself is utterly useless, but will spice up your average AI match a lot if it has eco-capable allies.

Well they had the metal and energy for Bertha so even if it was shared income 2 more minutes and i would have getting nuked from the otherside of the map :P
The cai + rai sounds like real challenging team.

Unsure about that game, but i played some mechwarrior from zkl recently.
